Black tea is a combination of green tea. The one we currently drink is made mainly by two methods and have not changed since the nineteenth century: the old fashion-style
Oxidation allows better conservation, several years against a maximum of a year and a half for green, that’s what made it the darling of traders.
How to prepare black tea? A whole art:
The preparation of the black tea is a subtle balance between preserving the properties and preserving the taste.
We will, therefore, play on 3 levers: the method, the temperature, and the brewing time.
We give specific advice for each of our teas in their product sheet. However, we can adopt a general preparation method that will work for all black teas. Here are a few tips.
The method:
This is how we do it in the tea industry, but it can be tedious, so no obligation!
- Boil water, then pour it into your teapot and into your cups. Leave it for a while and then remove it. It is called “announcement water,” it does not subject the tea to a thermal shock.
- Put the tea in the teapot (about 2.5 g for 15 cl of water) and let it release its scent in the steam of the announcement water.
- Put water to heat, but without boiling it, then pour it into the teapot.
- Leave to infuse (no more than 5 min), without touching. Remove the announcement water from the cups, and you can then serve it.
Brewing time:
Regarding the infusion time, this varies according to the varieties:
- Dark black: 5 to 7 minutes
- Black spring harvest (first flush): 2 to 2’30 minutes
- Black summer harvest (second flush): 3 minutes
- Black autumn harvest (third flush): 4 minutes
- Full-leaf black: 3 to 5 minutes
- Black with broken leaves: 3 to 4 minutes
- Black with crushed leaves: 2 to 3 minutes
- Flavored: 3 to 5 minutes
General:
Tea should never be boiled, which is not suitable for the qualities of this delicious drink. A temperature of 80-95°C is perfect.
Do not brew more than 5 min. It will become bitter! Similarly, let infuse at least 2 min so that it has a minimum of taste!
Purists prepare each kind of tea in a unique teapot so as not to mix the flavors. If you go to a purist, be careful not to take a rooibos teapot to prepare black tea!
Likewise, you do not clean a teapot, except by rinsing it with clear water. If the interior takes on the color of the tea, it’s not dirty, it’s that your teapot is “cheeky” (and that’s an excellent thing!)!
